Ingredients

750g gnocchi

250g streaky bacon, chopped

200g baby spinach, washed and dried

1 garlic clove, thinly sliced

100ml heavy cream

100g blue cheese, crumbled

Salt and pepper to taste

Directions

  1. Fill a large pot with water, add salt, and bring to a rolling boil over high heat.

  2. While the water heats, place the chopped bacon in a large frying pan over medium-high heat. Cook, stirring occasionally, until the bacon is golden brown and crispy, about 5-7 minutes.

  3. Add the sliced garlic to the bacon and stir for about 30 seconds until fragrant. Add the washed and dried spinach, stirring constantly until the spinach is completely wilted, 2-3 minutes.

  4. Carefully add the gnocchi to the boiling salted water. Once the gnocchi float to the surface, cook for an additional 1-2 minutes, then use a slotted spoon to transfer them directly to the frying pan with the bacon and spinach.

  5. Pour the heavy cream over the gnocchi mixture and stir gently. Crumble the blue cheese over the top and fold it in until the cheese melts and creates a creamy sauce, about 1-2 minutes.

  6. Season with salt and pepper to taste. Serve immediately while hot and creamy.
