Ingredients

1 lb fresh strawberries, hulled and quartered

2½ cup granulated sugar

2 cup unfiltered apple cider vinegar

1 oz dry gin

ice cubes

4 fl oz seltzer water

2 sprig fresh mint sprigs, for garnish

Directions

  1. Combine the hulled and quartered strawberries with the granulated sugar in a large bowl. Stir thoroughly until well combined. Cover the bowl tightly with plastic wrap and refrigerate for at least 8 hours, up to 48 hours, stirring occasionally to distribute the sugar. The mixture will gradually release its juice and become increasingly syrupy. Once ready, stir once more and use a slotted spoon to remove the solid strawberry pieces, pressing them gently against the bowl to extract any remaining liquid. You should have approximately 2 cups of strawberry syrup; some undissolved sugar may remain.

  2. Pour the apple cider vinegar into the strawberry syrup and whisk to combine thoroughly.

  3. Transfer the strawberry shrub syrup to a clean glass or plastic bottle, including any undissolved sugar. Seal the bottle tightly and shake well to combine. Store in the refrigerator for up to one month.

  4. To prepare the cocktail, fill a tumbler glass halfway with ice cubes. Pour 1 to 2 ounces of the strawberry shrub syrup and 1 ounce of gin into a cocktail shaker with ice, then shake vigorously until well chilled.

  5. Strain the mixture into the ice-filled glass, top with 4 to 5 ounces of seltzer water, and stir gently. Garnish with fresh mint sprigs and serve immediately.

The 545 minutes is honest—that's mostly the shrub steeping overnight or longer, which you cannot skip for flavor. All ingredients are available at any Charlotte chain, but strawberries matter here: quality and price swing wildly by season, and in winter you'll pay a real premium or settle for mediocre fruit. The drink itself is straightforward assembly once the shrub is ready, and the small batch size (2 servings) means this is more entertaining-guest fare than a weeknight pour. Fresh mint is the only ingredient that might require a second stop if you do not grow it, but most stores carry it year-round.
