Ingredients
1 tablespoon active dry yeast
1 1/2 cups warm water (100 to 110 °F)
2 cups all-purpose flour
1 1/2 cups whole wheat flour
1 tablespoon sugar
1/2 teaspoon salt
1 egg, beaten
2 tablespoons sesame seeds (optional)
Directions
In a large bowl, combine the warm water and yeast. Let sit for 5 minutes until the yeast becomes foamy and activated.
Add the sugar and salt to the yeast mixture and stir to combine.
Gradually add the all-purpose flour and whole wheat flour to the wet ingredients, stirring until a shaggy dough forms.
Knead the dough on a lightly floured surface for 8 to 10 minutes until it becomes smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp towel, and let rise in a warm place for about 1 hour until doubled in size.
Punch down the dough and divide it into 12 equal pieces.
Roll each piece into a long rope approximately 18 inches long, then shape into a pretzel by crossing the ends over the middle section and pressing the ends to the bottom of the loop.
Place pretzels on greased baking sheets and let them rise for 15 to 20 minutes until slightly puffy.
Preheat the oven to 375 °F.
Brush each pretzel with the beaten egg wash.
Sprinkle sesame seeds over the top of each pretzel if desired.
Bake for 15 to 20 minutes until golden brown. The pretzels are done when they have a light golden color and sound hollow when tapped on the bottom.
Remove from the oven and let cool on a wire rack for a few minutes before serving warm.
