Ingredients

100g bag mixed rocket, spinach and watercress salad

2 avocados, peeled, stoned and cut into chunks

50g ready-made croutons

1 tsp Dijon mustard

1 tbsp wine vinegar

3 tbsp extra-virgin olive oil

1 tsp water

Directions

  1. In a small bowl, whisk together the Dijon mustard, wine vinegar, water, and extra-virgin olive oil until well emulsified. Season the dressing with salt and pepper to taste.

  2. Transfer the mixed greens and avocado chunks to a large bowl. Pour the dressing over the salad and gently toss with your hands until all leaves and avocado are evenly coated.

  3. Add the croutons just before serving and toss once more to combine, keeping the croutons as crispy as possible.

Every ingredient is a staple at Harris Teeter, Food Lion, Kroger, and Walmart in Charlotte, with no special trips required. At roughly $1.50 per serving—driven mainly by avocado cost, which fluctuates seasonally—this is a solid weeknight option. The stated 10 minutes is honest if greens are pre-washed and you're using store-bought croutons; whisk the vinaigrette while you chop the avocado. This is a light side dish or solo lunch that won't reheat well once dressed, so it's best eaten fresh, and the simplicity means it works for most households, though it's filling only if paired with protein.
