Ingredients

1 cup baby spinach leaves, chopped

3 large mushrooms, sliced

2 mini seedless cucumbers, chopped

½ ripe avocado, diced

150 g smoked ham, diced

2 large hard-boiled eggs, coarsely chopped

¼ cup pitted kalamata olives, sliced

¼ cup paleo mayo

1 tbsp preserved lemon, chopped

1 tsp herbes de Provence

¼ tsp Himalayan salt

½ tsp freshly cracked black pepper

Directions

  1. Arrange the chopped spinach, sliced mushrooms, diced cucumbers, and diced avocado in a large mixing bowl.

  2. Add the diced smoked ham, coarsely chopped hard-boiled eggs, and sliced kalamata olives to the bowl.

  3. In a small bowl, whisk together the paleo mayo, chopped preserved lemon, herbes de Provence, Himalayan salt, and cracked black pepper to create the dressing.

  4. Pour the dressing over the salad ingredients and toss gently until everything is evenly coated and well combined, being careful not to crush the vegetables or break apart the eggs.

  5. Serve the salad immediately while fresh and crisp.
