Ingredients

2 tablespoons butter, softened

½ cup dried apricots, finely chopped

4 ounces Havarti cheese, thinly sliced

4 slices sourdough bread slices

Directions

  1. Spread softened butter evenly on one side of each of the four bread slices.

  2. Heat a cast iron griddle or grill pan over medium heat until hot.

  3. Place one slice of bread buttered-side down on the hot griddle. Top with half of the Havarti cheese slices, then arrange half of the chopped dried apricots over the cheese, and finish with the remaining Havarti cheese slices.

  4. Place the second slice of bread on top with the buttered side facing up.

  5. Lay a sheet of parchment paper over the sandwich, then place a heavy cast iron skillet on top to press and weigh down the sandwich.

  6. Cook for 3 to 5 minutes until the bottom is golden brown and crispy.

  7. Carefully remove the top skillet and parchment paper, then flip the sandwich and replace the parchment and skillet on the other side.

  8. Cook for another 3 to 5 minutes until the second side is golden brown and the cheese is fully melted.

  9. Transfer the sandwich to a cutting board, let cool for 1 minute, then cut in half and serve immediately.
