Grilled Watermelon, Feta, and Tomato Salad

Ingredients
1 tablespoon olive oil, plus more for drizzling and greasing
1 (4-pound) seedless watermelon, rind removed, cut into 1/2-inch-thick slices
1 teaspoon kosher salt, divided
4 multicolored heirloom tomatoes, thinly sliced
1/2 teaspoon freshly ground black pepper, plus more to taste
6 ounces feta cheese, thinly sliced (about 1 1/4 cups)
Directions
Heat a grill or grill pan to medium-high temperature. Lightly oil the grate or pan surface to prevent sticking.
Using a 2-inch ring cutter or drinking glass, cut the watermelon slices into circles to create 20–22 uniform rounds. Reserve any scraps for another use. Season both sides of each watermelon circle with half of the kosher salt.
Place the seasoned watermelon circles on the hot grill. Cook for about 2 minutes per side until well charred with dark grill marks. Transfer the grilled watermelon to a plate and let cool to room temperature, about 10 minutes.
While the watermelon cools, combine the sliced tomatoes, 1 tablespoon of olive oil, remaining salt, and black pepper in a large bowl. Toss gently to coat.
On a serving platter, arrange the ingredients in alternating layers: begin with a grilled watermelon circle, followed by some tomato mixture (draining off excess liquid first), then a slice of feta. Repeat this pattern until all ingredients are used.
Drizzle the salad with additional olive oil and season with fresh black pepper to taste. Serve immediately.
