½ cup Margarine
½ cup Sugar
1 teaspoon Vanilla extract
1 Egg
2 cups All-purpose flour
2 teaspoons Baking powder
8 ounces Nonfat or light cream cheese
½ cup Sugar
1 teaspoon Vanilla extract
Fresh fruit for topping (such as berries, kiwi, or melon)
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Preheat your oven to 375°F. In a large mixing bowl, cream together the margarine, 1/2 cup sugar, and 1 teaspoon vanilla extract. Beat in the egg and continue mixing until the mixture is light and fluffy, approximately 2–3 minutes.
In a separate bowl, whisk together the flour and baking powder. Gradually add this dry mixture to the creamed ingredients, stirring until just combined and no dry flour remains.
Spread the cookie dough evenly onto a pizza pan, baking sheet, or 9×13 inch baking pan, making the layer approximately 1/8 inch thick. Smooth it out with the back of a spoon or a spatula.
Bake for 10 to 12 minutes, or until the crust is lightly golden brown. Remove from the oven and allow to cool completely at room temperature.
While the crust cools, prepare the cheese spread. In a clean bowl, combine the cream cheese, remaining 1/2 cup sugar, and remaining 1 teaspoon vanilla extract. Mix until smooth and creamy.
Once the cookie crust has cooled completely, spread the cream cheese mixture evenly over the entire surface.
Arrange your choice of fresh fruit on top of the cream cheese layer, creating an attractive pattern.
Refrigerate until ready to serve, at least 30 minutes. Cut into portions and enjoy.
