A delicious Spanish-inspired flatbread grilled to perfection and topped with fresh salsa, spicy chorizo, colorful peppers, and melted cheddar cheese. This dish combines the smoky char of the grill with vibrant flavors in every bite.

Ingredients

2 Tbsp. olive oil

1 lb. refrigerated pizza dough, at room temperature

3/4 cup fresh salsa

4 oz. dry-cured Spanish chorizo, chopped

1/2 cup mixed red and yellow pepper strips

1 pkg. (8 oz.) shredded triple cheddar cheese

Directions

  1. Preheat your grill to medium heat. Lightly brush 1 Tbsp. of olive oil onto each of two large sheets of parchment paper. Divide the pizza dough into two equal pieces. Place one piece of dough on the first oiled parchment sheet and gently roll or stretch it out to form a 14x8-inch rectangle or 12-inch round. Repeat with the second piece of dough on the second oiled parchment sheet.

  2. Carefully transfer each dough piece, still on its parchment, to the grill grates. Once on the grill, peel away and discard the parchment paper. Grill the dough for 2 to 4 minutes, until the bottom side develops light char marks. Using tongs, flip the flatbreads and place them grilled side up on a clean work surface.

  3. Distribute the fresh salsa evenly over the grilled surface of both flatbreads. Top with the chopped chorizo, then scatter the red and yellow pepper strips across each one. Finish by sprinkling the shredded cheddar cheese over the toppings. Return the flatbreads to the grill and cook for 4 to 5 minutes, until the cheese is completely melted and bubbly. Remove from heat and serve immediately.
