Ingredients
6 large large potatoes, cleaned and peeled
4 tbsp olive oil
salt
black pepper
1 tsp smoked paprika
3 clove garlic cloves
1 large egg
1 tbsp freshly squeezed lemon juice
1 tbsp fresh parsley, chopped
Directions
Preheat your oven to 425°F.
Cut the cleaned and peeled potatoes into wedges. Place the wedges in a baking dish and season with salt, black pepper, and smoked paprika. Drizzle with the olive oil and toss until all the potato pieces are evenly coated.
Bake the potatoes uncovered in the preheated oven for 45 to 50 minutes, until they are golden brown and crispy. Do not turn them; they will become crispy on both sides naturally.
While the potatoes roast, prepare the aioli: Place the garlic cloves, egg, lemon juice, fresh parsley, salt, and black pepper into a food processor or blender. Puree until the mixture is smooth.
With the processor running on low speed, add the remaining olive oil in a very slow, steady stream. Continue processing until the mixture emulsifies and becomes thick and creamy, about 3 to 5 minutes total.
Remove the roasted potatoes from the oven. Serve them hot, drizzled with the garlic aioli or with the aioli on the side as a dipping sauce.
Comments
Every ingredient is a staple at every major Charlotte grocer—potatoes, garlic, eggs, lemon, and parsley are all year-round basics, and no special trip needed. The stated 75 minutes is honest: 15 minutes prep (peeling and chopping potatoes, mincing garlic, making aioli) plus 50 minutes roasting, with a few minutes' rest. Cost per serving lands around $1.50–$2.00 depending on whether you use budget potatoes, since olive oil and eggs are minimal here. This is a no-fuss side dish that reheats well and feeds a family without demanding attention during cooking—you can roast the potatoes while you handle the main. The smoked paprika is the only ingredient that might not be in every pantry, but it's optional and carries no real cost; skip it or add it on your next Harris Teeter run. The only caveat is that homemade aioli can split if the egg is cold, so keep ingredients at room temperature and whisk slowly.
