2 large sweet potatoes, peeled and cut into ½-inch cubes

1 cup water

1 tablespoon vegetable oil

2 chicken sausages, sliced into ¼-inch rounds

1 small yellow onion, peeled and diced

1 bell pepper, cored and diced

2 cloves garlic, peeled and minced

1 teaspoon vegetable oil

4 large eggs

Directions

  1. Combine the cubed sweet potatoes and water in a large skillet over high heat. Bring to a boil.

  2. Reduce heat to low and simmer for about 20 minutes, stirring occasionally, until the sweet potatoes are tender and have absorbed all the water.

  3. Add 1 tablespoon vegetable oil to the skillet along with the sliced chicken sausages, diced onion, diced bell pepper, and minced garlic. Stir well to combine with the sweet potatoes.

  4. Cook for about 20 minutes over medium heat, stirring occasionally, until the onion is lightly browned and the sweet potatoes are completely tender.

  5. Divide the hash evenly among 4 serving plates.

  6. Return the skillet to the stove and heat over medium-high heat. When hot, add the remaining 1 teaspoon vegetable oil.

  7. Crack one egg into the skillet and cook for 3 to 5 minutes until the egg white is set and opaque but the yolk is still soft. Repeat with the remaining 3 eggs, cooking one egg at a time.

  8. Carefully flip each cooked egg and cook for 1 additional minute.

  9. Place one egg on top of each portion of hash and serve immediately while hot.
