Ingredients

6 cups water

1 chicken bouillon cube

1 pound diced white potatoes

1 tablespoon minced garlic

1 pound orzo pasta

1 pound fresh asparagus spears, woody bottoms removed and cut in half

6 ounces frozen green peas

1 pound cooked diced chicken breast

1 lemon, juiced

1 teaspoon lemon zest

Salt to taste

White pepper to taste

Directions

  1. Bring 6 cups of water to a boil in a large pot. Add the chicken bouillon cube and stir until dissolved.

  2. Add the diced potatoes and minced garlic to the broth. Simmer for 8 minutes until the potatoes begin to soften.

  3. Add the orzo pasta to the pot and cook for 8 minutes, stirring occasionally to prevent sticking.

  4. Add the fresh asparagus pieces and frozen green peas to the soup. Stir gently and continue simmering for 5 minutes.

  5. Stir in the cooked diced chicken breast and simmer for 2 minutes to heat through.

  6. Remove the pot from heat and stir in the fresh lemon juice and lemon zest.

  7. Season the soup with salt and white pepper to taste. Ladle into bowls and serve warm.

This soup hits all the marks for a weeknight Charlotte kitchen. Every ingredient lives at Harris Teeter, Food Lion, Walmart, or ALDI—no special stops. At roughly $0.75 per serving (chicken breast and orzo carry the load), it's solid budget cooking. The 40-minute claim holds up if you work while things simmer, though actual hands-on time is about 15 minutes. It's a gentle, one-pot family meal that reheats perfectly and works straight from the stove; the only caveat is that asparagus softens noticeably the next day, so this is best eaten fresh.
