Ingredients

3 Green onions, white parts

¼ cup Soy sauce

1 tablespoon Brown sugar

¾ cup Low sodium beef or chicken broth

2 teaspoons Cornstarch

2 cups Kimchi, roughly chopped

8 bags Individual bags Fritos corn chips

Shredded cheddar cheese

Fresh cilantro, roughly chopped

Directions

  1. Heat the canola oil and sesame oil in a large skillet over medium-high heat. Once shimmering, add the minced garlic, minced ginger, and the white parts of the green onions. Stir-fry for about 1 minute until fragrant.

  2. Add the ground beef to the skillet, breaking it apart with a wooden spoon as it cooks. Continue cooking for 3 to 4 minutes, stirring frequently, until the beef is no longer pink and has browned. The internal temperature should reach 165°F.

  3. Stir in the soy sauce, brown sugar, and black pepper. Cook for 30 seconds to allow the flavors to meld.

  4. In a small bowl, whisk together the broth and cornstarch until the cornstarch dissolves completely. Pour this mixture into the skillet with the beef and stir well.

  5. Add the chopped kimchi to the beef mixture and stir until evenly combined. Simmer for 1 minute until the sauce thickens slightly.

  6. Open each bag of Fritos corn chips and carefully crush them slightly. Divide the warm beef and kimchi mixture evenly among the 8 chip bags, pouring it directly over the chips.

  7. Top each chip bag with shredded cheddar cheese and garnish with the reserved green parts of the green onions and fresh cilantro. Serve immediately while the chips are still warm and crispy.
