1 tablespoon vegetable oil

½ cup onion, diced

1 clove garlic clove, minced

4½ cups cauliflower, finely chopped or riced

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon fresh lemon or lime juice (optional)

2 tablespoons fresh parsley or cilantro, chopped (optional)

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. Wash and grate or finely chop the cauliflower into rice-sized pieces, or pulse in a food processor until the texture resembles grain rice. Set aside.

  3. Heat the vegetable oil in a large skillet over medium heat for about 1 minute until shimmering.

  4. Add the diced onion to the hot oil and sauté for 3 to 5 minutes, stirring occasionally, until the onion becomes soft and translucent.

  5. Add the minced garlic and stir constantly for about 30 seconds until fragrant.

  6. Add the cauliflower rice to the skillet along with the salt and black pepper. Stir well to combine all ingredients.

  7. Sauté for 3 to 5 minutes, stirring frequently, until the cauliflower is tender and heated through.

  8. Remove from heat. Drizzle with lemon or lime juice if desired and top with fresh chopped parsley or cilantro.

  9. Transfer to a serving dish and serve warm as a side dish.
