Ingredients
4 medium-large Yukon Gold potatoes, peeled
1 medium onion, peeled
2 tablespoons finely minced fresh parsley
2 tablespoons finely minced green onion
2 large eggs, beaten
2 tablespoons all-purpose flour or matzoh meal
Coarse sea salt to taste
Freshly ground black pepper to taste
Grapeseed oil for frying
Directions
Using a food processor fitted with the shredding blade, shred the peeled potatoes and onion. Work in batches if needed to avoid overcrowding. Transfer the shredded vegetables to a clean kitchen towel and squeeze firmly to remove excess moisture—this step is essential for crispy latkes.
Place the dried potato and onion mixture in a large bowl. Add the minced parsley and green onion, then stir to combine.
Pour the beaten eggs over the potato mixture and add the flour or matzoh meal. Sprinkle generously with coarse sea salt and freshly ground black pepper. Mix everything together until well combined.
Heat about ¼ inch of grapeseed oil in a large skillet over medium-high heat. Allow the oil to reach 350°F, or until a small piece of potato sizzles immediately when added.
Working in batches to avoid crowding, scoop about 2 tablespoons of the potato mixture per latke and carefully place it in the hot oil. Gently flatten each mound with the back of a spatula to create a pancake about ¼ inch thick.
Fry for 3 to 4 minutes on the first side until deeply golden and crispy. Carefully flip and fry the other side for another 3 to 4 minutes until equally golden and the interior is cooked through.
Transfer the finished latkes to a paper towel-lined plate to drain excess oil. Keep warm latkes in a 200°F oven while you finish cooking the remaining batches.
Serve the latkes warm. Season with additional salt and pepper if desired, and accompany with your choice of sour cream, applesauce, or other preferred toppings.
