Asian Hamburgers with Sticky Rice

Ingredients
3 Red Asian shallots, coarsely chopped
1 Lemongrass stalk, white part only, grated or finely chopped
500 g Ground pork and beef mixture
½ tsp Salt
2 tsp Sugar
1 tsp Chili powder
60 ml Fish sauce
6 Spring onions (scallions), chopped
Directions
Place the coarsely chopped shallots and lemongrass into a mortar and pestle. Grind them together until they form a rough, fragrant paste.
Transfer the shallot-lemongrass paste to a large mixing bowl. Add the ground meat, salt, sugar, chili powder, fish sauce, and chopped spring onions.
Mix all ingredients thoroughly with your hands until just combined. Divide the mixture into 4 to 6 equal portions and shape each into a compact patty about 3/4 inch thick.
Heat a grill pan or frying pan over medium-high heat. Once hot, place the patties in the pan and cook for 3 to 4 minutes on the first side until lightly browned. Carefully flip each patty and cook the other side for 3 to 4 minutes, until cooked through (internal temperature of 160°F for the ground meat mixture).
Serve the cooked hamburgers warm alongside sticky rice and a crisp green mango salad.
