Ingredients

2 cups Better Baking Mix

1 cup water

2 tablespoons vegetable oil, plus more for cooking

2 large eggs, beaten

Directions

  1. Wash your hands thoroughly with soap and water before beginning.

  2. In a large mixing bowl, combine the Better Baking Mix, water, 2 tablespoons vegetable oil, and beaten eggs.

  3. Stir the mixture just until the dry ingredients are moistened; do not overmix. A few small lumps in the batter are fine.

  4. Heat a skillet or griddle over medium-high heat.

  5. When the skillet is hot enough, drops of water sprinkled on the surface will dance and evaporate immediately.

  6. Lightly coat the hot skillet with vegetable oil or cooking spray.

  7. Pour 3 to 4 tablespoons of batter onto the hot skillet for each pancake, spacing them apart.

  8. Cook until the top surface is covered with bubbles and the edges appear set.

  9. Flip the pancake and cook the other side until lightly golden brown.

  10. Transfer finished pancakes to a warm plate and serve immediately.

This is a genuinely cheap, fast weeknight win. A box of baking mix runs $2-3 at any Charlotte chain—Harris Teeter, Food Lion, Walmart, ALDI, all stock it—and you likely have water, oil, and an egg at home already. The stated 15 minutes is honest: five to mix, ten to griddle a dozen pancakes. Twelve servings means you feed a family of four with leftovers, and they reheat perfectly in a toaster or oven the next morning without losing their structure. The only caveat is the batter itself: no real depth of flavour without vanilla, cinnamon, or a splash of buttermilk, so budget a minute to stir in one or two pantry upgrades if you want them to taste like more than neutral breakfast fuel.
