Mini Deep Dish Pizzas

Crispy flour tortilla cups baked in a muffin tin and filled with tangy pizza sauce, melted mozzarella and Parmesan cheeses, and savory mini pepperoni slices. These individual deep-dish pizzas are quick to assemble and bake, making them perfect for a casual weeknight meal that everyone can customize.

Ingredients
4 Flour tortillas (8-inch, for burritos)
1 cup Pizza sauce
¾ cup Shredded mozzarella cheese
¼ cup Grated Parmesan cheese
36 Mini pepperoni slices
Directions
Preheat the oven to 425°F. Lightly coat a 12-cup muffin tin with nonstick spray or a thin layer of oil.
Place one flour tortilla on a flat work surface. Using a round cutter or the rim of an empty can (about 3-4 inches in diameter), cut out 3-4 circles from the tortilla by pressing firmly with a rocking motion until you cut completely through. Repeat with remaining tortillas until you have 12 circles total.
Press one tortilla circle gently into each muffin cup, forming a shallow cup shape with an open center. Be careful not to tear the tortilla.
Spoon approximately 1 tablespoon of pizza sauce into the bottom of each tortilla cup.
Divide the shredded mozzarella evenly among all 12 cups, then top each with a sprinkle of grated Parmesan cheese.
Place 3 mini pepperoni slices on top of the cheese in each cup.
Bake in the preheated oven for 10-12 minutes, until the cheese is melted and bubbling and the tortilla edges are lightly golden.
Remove from the oven and let cool for 1-2 minutes in the tin before serving warm.
