Ingredients
2 cups Cooked chicken, diced
1 stalk Celery stalk, rinsed and chopped
½ cup Walnuts, chopped
1 Apple, washed and cored
½ cup Mayonnaise
¼ cup Apple yogurt
2 teaspoons Honey
½ Lemon juice
½ teaspoon Kosher salt
Directions
In a small bowl, whisk together the mayonnaise, yogurt, honey, lemon juice, and kosher salt until the mixture is smooth and creamy. Set the dressing aside.
In a large bowl, combine the diced cooked chicken, chopped celery, and chopped walnuts.
Wash and core the apple, then cut it into bite-sized pieces. Add the apple pieces to the chicken mixture.
Pour the prepared dressing over the chicken and apple mixture. Toss gently until all ingredients are evenly coated.
Transfer to a serving bowl and refrigerate until ready to serve. The salad can be made up to 2 hours ahead.
Comments
Every ingredient lands at a Charlotte chain without a second trip—Harris Teeter and Walmart stock walnuts in the baking aisle year-round, and the yogurt-mayo mix keeps costs under $3 per serving. The stated 15 minutes is honest if you're starting with cooked chicken; if you poach it fresh, add 20 minutes. This reheats poorly (mayo separates), so it's strictly a same-meal salad, and while it works as a lunch side or light dinner, it leans fussy for weeknight family feeding—fine for two adults, less practical for kids who reject celery texture.
