2 tablespoons Balsamic vinegar

1½ tablespoons Extra virgin olive oil

dash Black pepper

2 cups Watermelon, cut into chunks

2 cups Cantaloupe, cut into chunks

¼ cup Red onion, thinly sliced

6 cups Fresh spinach or arugula

½ cup Reduced-fat feta cheese crumbles

¼ cup Pine nuts

Directions

  1. In a small bowl, whisk together the balsamic vinegar, olive oil, and a dash of black pepper until well combined. Set the vinaigrette aside.

  2. In a large bowl, combine the watermelon chunks, cantaloupe chunks, sliced red onion, fresh spinach or arugula, feta cheese crumbles, and pine nuts.

  3. Pour the prepared vinaigrette over the salad and toss gently but thoroughly until all ingredients are evenly coated.
