3 cups cooked and drained spaghetti or macaroni
4 tablespoons butter, melted
4 large eggs, beaten
3 cups whole milk
1½ teaspoons Dijon mustard
2 teaspoons salt
freshly ground black pepper
1 teaspoon ground hot red pepper (cayenne), optional
1 pound sharp Cheddar or Gruyère cheese, grated
Directions
Preheat your oven to 350°F. Lightly butter a 9x13-inch baking dish or similar 3-quart casserole.
Combine the cooked and drained pasta with the melted butter in a large bowl, tossing gently to coat evenly.
In another bowl, whisk together the beaten eggs, milk, Dijon mustard, salt, black pepper to taste, and cayenne pepper if using, until well combined.
Stir the grated cheese into the egg and milk mixture until evenly distributed.
Pour the cheese and egg mixture over the buttered pasta, folding gently until the pasta is fully coated and the cheese is evenly distributed throughout.
Transfer the mixture to the prepared baking dish, spreading it in an even layer.
Bake uncovered for 40 to 50 minutes, until the top is lightly golden and a knife inserted in the center comes out clean or a food thermometer registers 160°F, indicating the eggs are fully cooked and set.
Remove from the oven and let rest for 5 minutes before serving warm.
