Ingredients
1 pound 90% lean ground beef
7 medium potatoes, peeled and thinly sliced
1 1/3 cups water
3/4 teaspoon seasoning mix
Salt to taste
Directions
Wash and peel the potatoes, then thinly slice them. Set aside.
Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until browned throughout, about 5 to 7 minutes. The internal temperature should reach 160°F.
Carefully drain the excess fat from the skillet, leaving just the cooked beef.
Pour in the water and add the sliced potatoes and seasoning mix to the skillet. Stir well to combine all ingredients with the beef.
Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover the skillet, and simmer for 20 to 30 minutes until the potatoes are tender when pierced with a fork.
Uncover the skillet and continue cooking over medium heat, stirring occasionally, until most of the excess water has evaporated, about 3 to 5 minutes.
Taste the dish and add a pinch of salt if needed. Serve hot.
Store any leftovers in an airtight container and refrigerate within 2 hours. Consume within 3 to 5 days.
