Ingredients

4 tablespoons chicken base (such as Better Than Bouillon)

1 cup frozen peas

1 small onion, thinly sliced

12 ounces shredded cooked chicken

4 nests rice noodles or precooked ramen

Kosher salt to taste

Freshly ground black pepper to taste

1/2 cup fresh dill, minced

Directions

  1. Bring 6 cups of water to a boil in a large pot over high heat. Stir in the chicken base until fully dissolved, creating a fragrant broth.

  2. Add the sliced onion to the boiling broth and cook for 1 minute until softened.

  3. Place the rice noodle nests into the broth and cook according to package directions, typically 3–4 minutes, until tender. If using precooked ramen, add and heat through for 1–2 minutes.

  4. Gently stir in the shredded chicken and frozen peas, and simmer for 1 minute until the peas are heated through.

  5. Remove from heat and fold in the fresh minced dill. Taste and adjust seasoning with kosher salt and black pepper as needed.

  6. Divide among four bowls and serve immediately, ensuring each portion receives an equal share of noodles, broth, and garnish.
