Ingredients
1 cup cooked brown rice
1/2 cup skim or 1% milk
1/2 teaspoon ground cinnamon
1 cup chopped mixed fruit (apples, bananas, raisins, berries, or peaches)
2 tablespoons chopped nuts (walnuts or almonds)
Directions
Wash your hands thoroughly with soap and water before beginning.
In a microwave-safe bowl, combine the cooked brown rice, milk, and cinnamon. Stir well to combine.
Microwave the rice mixture on HIGH for 45 seconds.
Stir the mixture and continue microwaving on HIGH for another 45 to 60 seconds, until the rice is heated through and the mixture reaches a warm, creamy consistency.
Divide the warm rice mixture evenly between two serving bowls.
Top each bowl with half of the chopped mixed fruit and half of the chopped nuts.
Serve immediately while warm and enjoy.
Store any leftover rice mixture in an airtight container in the refrigerator and use within 2 days. Reheat gently in the microwave before serving, adding additional milk if desired to restore creaminess.
Comments
This recipe understates its time: you cannot cook brown rice in 7 minutes, so the stated prep assumes leftover rice, which is fine but worth flagging for weeknight cooks. Ingredients are all standard grocery-store staples available at any Charlotte chain—brown rice, milk, cinnamon, and mixed fruit (fresh or frozen) run cheap, landing under $2 per serving. The real catch is household fit: this works only if you have rice on hand, and the "mixed fruit and nuts" vagueness means you'll interpret it loose. Reheats well if you chill it and eat it cold, or you can warm it and add fresh fruit at serving.
