Bay leaves are widely used in Mexican and Latin American cuisine to add fragrance and flavor. They have a sharp bitter taste alone but the aroma it adds to a dish can be somewhat similar to that of oregano or thyme. Bay leaves can also be crushed or ground before cooking.
